Bhutte ki Kees(भुट्टे की कीस)

Bhutte ki kees, is mostly found as the delicious healty food, in indore, mostly found at Joshi Dahi Bada House, Bada Sarafa, Sarafa Bazaar, The bhutte(cobs) is made from corn, we raw then in to mixture.

Ingrediants :-

  • Corn - 4 (soft, milky)
  • Milk - 1 cup
  • Fresh Coconut - 2 - 3 tbsp, grated
  • Green coriander - 2-3 tbsp, finely chopped
  • Ghee - 2 tbsp
  • Green chili - 2 finely chopped
  • Ginger - 1 inch piece, grated
  • Asafoetida - 1/2 pinch
  • Cumin - half teaspoon
  • Mustard seeds - half a teaspoon
  • Red chili - half of 1/4 tsp
  • Turmeric powder - half of 1/4 tsp
  • Salt - 3/4 tsp (as per taste)
  • Sugar - 1/2 - 1 tsp
  • Lemon juice - 1 tsp 

Process of making bhutee ka khees :- 

  • Take out the pulp from the corn by tightening the pumpkin, grate all the corn and make a paste.
  •  Heat ghee in a pan, put asafoetida, cumin and mustard seeds in the hot ghee, after roasting cumin and mustard, add ginger, green chillies, turmeric powder and now corn paste, and stir until it changes color slightly. Fry, the paste gets ready after roasting in 5-6 minutes, now add red chili powder to it and mix. Add milk and sugar, mix and cook stirring continuously till it starts boiling.
  • After the corn kees comes to a boil, add salt and mix and cover and let it cook on a low flame, keep stirring after every 2 minutes, in this way cook the corn kees for 10-12 minutes while stirring in between. After the corn cake is cooked, ghee starts separating from it, add green coriander and 1 tsp lemon juice and mix.
  • Corn cheese is ready, take out the corn cheese in a plate and garnish it with green coriander and grated coconut. Very nice Corn Cheese is made, serve and eat.
