 Paneer tikka masala is a delicious Indian dish that combines marinated paneer (Indian cottage cheese) with a creamy and flavorful tomato-based sauce. Here's a recipe to help you make paneer tikka masala for starters:

Ingredients:

For Paneer Tikka:

- 250 grams paneer, cut into cubes

- 1/2 cup yogurt

- 2 tablespoons gram flour (besan)

- 1 tablespoon ginger-garlic paste

- 1 teaspoon Kashmiri red chili powder

- 1/2 teaspoon turmeric powder

- 1 teaspoon garam masala

- 1 teaspoon cumin powder

- 1 tablespoon lemon juice

- Salt to taste

- 1 tablespoon oil

For Masala Sauce:

- 2 tablespoons oil

- 1 medium onion, finely chopped

- 2 medium tomatoes, pureed

- 1 tablespoon ginger-garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon Kashmiri red chili powder

- 1/2 teaspoon turmeric powder

- 1 teaspoon garam masala

- 1 teaspoon coriander powder

- 1/2 cup heavy cream

- Salt to taste

- Fresh cilantro leaves for garnish


Instructions:

1. In a mixing bowl, combine yogurt, gram flour, ginger-garlic paste, Kashmiri red chili powder, turmeric powder, garam masala, cumin powder, lemon juice, and salt. Mix well to form a smooth marinade.


2. Add the paneer cubes to the marinade and gently toss until each cube is well coated. Let it marinate for at least 30 minutes to an hour.


3. Preheat your oven to 400°F (200°C). Place the marinated paneer cubes on a greased baking tray and drizzle with oil. Bake for about 15-20 minutes or until the paneer is lightly golden and slightly charred. You can also cook the paneer on a stovetop grill pan or under a broiler if you don't have an oven.


4. While the paneer is baking, heat oil in a large pan over medium heat. Add cumin seeds and let them splutter. Then, add chopped onions and sauté until they turn golden brown.


5. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.


6. Add tomato puree, Kashmiri red chili powder, turmeric powder, garam masala, coriander powder, and salt. Mix well and cook for 5-7 minutes until the oil starts to separate from the masala.


7. Reduce the heat to low and add the heavy cream. Stir well to combine and let it simmer for a few minutes until the sauce thickens slightly.


8. Add the baked paneer cubes to the masala sauce. Stir gently to coat the paneer with the sauce. Let it simmer for a few more minutes to allow the flavors to meld together.


9. Garnish with fresh cilantro leaves and remove from heat.
